Controguerra Pecorino DOC
The Pecorino is an Abruzzo indigenous ancient grape variety, nearly lost, now rediscovered and vinified using modern methods. The Pecorino wine has a brightyellow colour with greenish tinges. It develops mineral nuances. Maximun expression of the native grape; this wine shows a complete structure, fresh palate with good smoothness and notes of acacia and reinette apple.

VINTAGE: Hand-pincking, III decade of August - I decade of September;
VINIFICATION: Vinification in total absense of oxygen (during grape harvest spread with dry ice to avoid pre-fermentations); crio-maceration 16/18hours with skins, gentle grape pressing (pneumatic press) and fermentation off the skins in steel tanks at a temperature controlled (10-11°C). After the fermentation the wine matures on its sediment for three months.
BOTTLE-AGEING: Approx 1 month;
SERVING SUGGESTION:It can be successfully matched with fish ent.rees, flavoured raw fish, shell fish, all fish dishes. Serve at a temperature of 6-8°C.
